Big Plans

I have big plans for the next few days.. The fourth of July is probably one of my most favorite holidays. Trying to keep my expectations under wraps and remember to just enjoy it all as it comes.

I want to make oatmeal-chocolate chip cookies,
and these mixed nuts (salty, sweet, savory good)
I want to get film for my yashica and maybe my dual flex that isn't set up for TtV
I want to find face paint so we can paint all the cousin's faces (and maybe the aunties, uncles and grandparents faces too?) I am hoping I can find this paint in a local store
I want to get some bubbles and maybe a really big wand
I want to find something cute for the boy to wear that is red.white.blue
I wish sparklers were legal here. They are so much fun to play with, they would be on my list, for sure.

We need to remember to bring with us to Greagle,
lawn chairs
baby gates for the deck
outlet covers (someone is really into outlets and cords these days, sigh)
swimsuits
our share of the food

I am sure there is more I am just forgetting right now.

So last week when I was picking up O from my mom's house (she watches him in the afternoons sometimes) she says, "I have a bunch of eggs that need to get eaten, can you use them?"
I think for a minute and tell her, "Sure. I can make quiche tonight"

I have been into making quiches lately. They are one of those foods that can be a breakfast, lunch or dinner (or anywhere in between). I like that. I also really like that I can throw random stuff that needs to be eaten/used into the mix and feel good that I am not going to waste food or have to run out and buy additional ingredients.

I have been using the pre-made dough. Which is great because it is easy and sort of fool proof, but kinda freaky when you read the box. So when I ran across a recipe for savory butter dough I logged it in the back of my mind to try. Even though I was going to be home alone with the baby that night I figured I could give it a shot (this could have proven disastrous, and almost did. Mid way through cracking the eggs for the quiche filling I looked into the living room to see a crawling MrO programing the DVR and ordering Thai food from a to-go menu that was laying around. I had to intervene with some other form of entertainment, and fast.

I can't say that I wasn't a little nervous, pie crust gets a bad rap and is it intimidating for some reason or another. But sometimes I find that if I go into a process without any expectations it will turn out alright. Maybe because I haven't over thunk it, ya know. (That and I had a back-up pre-made crust in the fridge just in case all went totally wrong).

So I pulled out the flour and the salt and double checked that I was supposed to use baking powder, not soda. Got my ice water in a cup and my rolling pin out. I cut up the cold stick of butter and threw it in with the dry ingredients and cut up the butter into the flour.

I added a bit of water and mushed it between my fingers (therapeutic), plopped it on the counter and kneaded it until I felt like it was good. I rolled it out and threw it in the dish pricked it with a fork a few times and then stuck it in the oven to pre-bake it before I put in the quiche filling. I then made another batch, repeating the steps all over again. while those baked off I made the fillings.

I had enough eggs for two quiches- a little over the top for a house of two adults and one baby but I took over the extras to a mama who could use a night off from cooking. What mama doesn't, right? So it all worked out just ducky.

I didn't break out the frozen spinach in time so I looked in the fridge and saw that I had an unopened jar of artichoke hearts in the back and also remembered that I had mozzarella that needed to be used up before as well. So I grated the rest of the orange cheese and the mozzarella and chopped up those hearts.
I am a big fan of red pepper flakes these days so I grabbed them along with s&p from the cupboard and spiced it all up.

yum. I think it turned out pretty darn good if I do say so myself. Way cheaper then buying the pre-made stuff, plus less weirdo ingredients too. Double yum.

Here is the recipe I used for the crust:

1 1/4 cups Flour
1/4 tsp. Salt
1/8 tsp. Baking Soda
1/2 cup Butter
3-4 tbsp ice water

As I was kneading and rolling the dough out I thought it might be fun to add in some herbs like fresh basil or thyme with the dough- to give it a little something extra. I will have to give it a shot next time I do this. I will let you know what I think!

DIRECTIONS:
measure and mix dry ingredients
cut cold butter into 16 pieces and add to dry ingredients, cut butter into dry ingredients until it resembles little peas.
add in 3 tbsp water and stir (or get your hands in there and mix)
turn dough out onto a lightly floured surface and knead, adding more water if dough seems dry. knead several times.

(this is where my grandma would say roll into a ball, wrap and place in freezer for 30 minutes)
Roll out dough and place in a 9inch pie pan
make the edges fancy
Prick with a fork several times
place foil over dough and pour dry beans in (I didn't do this dry bean step, partly because I didn't get why? anyone care to enlighten me?)
Bake off dough in oven for 10 minutes, remove beans/foil and bake off for another 3-5minutes

Fill and bake as directed.


The filling I used,

1/2 cup light mayonnaise
1/2 cup milk
4 eggs, lightly beaten
8 ounces shredded reduced-fat Cheddar/mozzarella
chopped artichoke hearts
pinch salt
pinch pepper
dash red pepper flakes

(you could add in bacon bits, sausage (already cooked), spinach, sun dried tomatoes, sauteed onions/garlic, mushrooms ...)

DIRECTIONS:
Preheat oven to 400 degrees F (200 degrees C). Line a cookie sheet with foil.
In a large bowl, whisk together mayonnaise and milk until smooth.
Whisk in eggs.
Layer your veggies, and cheese in pie shell, making several layers of each.
Pour in egg mixture.
Place quiche on prepared cookie sheet.
Cover quiche with foil.
Bake in preheated oven for 45 minutes.
Remove cover, and bake 10 to 15 minutes, or until top is golden brown and filling is set.

Let cool a bit so you can actually taste the goodness and not burn your tongue/roof of your mouth and enjoy! Share extras with friends.

Thanks for all the backyard love everyone! we have worked really hard to make the yard a place where we want to be- an extension of the house really. And I think that is the way it should be. We spend a lot of time outside and now that the shade is installed the couches are in place and the table set for guests we need to plan a big huge summer time bash I think. Wanna come over?!

so we are in the midst of learning how to crawl at our house. He is getting pretty good at it but sometimes forgets that he actually knows how to move himself from place to place. It is kinda funny- I set him down. He screams (Because who wants to sit on the floor when they have a perfectly good hip to straddle?) and then I walk away and wait. A second or two goes by and then things get quite. Then I hear his little - huh, huh, huh that match the placement of a knee and then a hand. And then he peaks around the corner of the couch and giggles once he sees me, all proud like.

He is also doing this thing that makes me totally proud. (although I am sure it has nothing to do with the massive amounts of yoga I did prior to and during my pregnancy, I would like to think it does but I am sure it doesn't). He pushes up into the best little downward dog move and just this morning I saw him in plank as well- little show off hanging out in a suspended push up!

I am quickly realizing that our house is in fact, not very baby proof. That or he just has a knack of finding everything he isn't supposed to. Two nights ago he got his little fingers stuck in the heater vent by the back slider and of course has also found the shiny trash can in the bathroom and the cords to the floor lamps. We are definitely going to have to do a little bit of overhaul in the next few weeks!

Corner View, Out my backyard

Here are a few views from the front and back yard plus a bonus video of the crazy rain we have been having lately.

When we moved into this house there was a GIANT pond with two waterfalls coming into it (we wound up having hundreds of goldfish in it, literally hundreds-but that is a different post). We drained and filled it in dubbing it a huge drowning hazard with all the kids around. We also had a "putting green", which was astro-turf with little holes and flags. Although this didn't need mowing or water it did need to be vacuumed of leaves and dirt (yes vacuumed) and you couldn't really sit on it, the 'grass' was scratchy and hard. Not to mention totally weird. So last summer we (I say we, but really I mean Daddy-O) started the transformation.

The pond was filled in, a retaining wall and small 'upper patio' were installed. An addition to the existing patio was poured and sod was layed. Daddy-O also built two veg garden boxes, he says there are more to come but they take time to build and fill so maybe not this summer. This year we have broccoli, lettuce, asparagus, peas, potatoes, tomatoes, basil, chives, garlic, and onions (I am sure I am forgetting something) all growing out there. I love being able to walk out and pick part of my dinner from the yard!

We found a nice table and chair set on Craig's List. It was a little rough around the edges but just need to be sanded and re-sealed. I made cushions for the seats and now we have a nice little dining area out back. We also ordered couches from Overstock.com, they are perfect for lounging in or napping in if you have the time and two weekends ago Daddy-O finished installing the shade-sails for much needed shade this summer.
The backyard really is turning into an oasis- now if it would just stop raining... oh well, the rainbow sure are pretty!

9 is divine!

Nine is Divine!

There is one little hand that will wave to say hello or good-bye
There are two teeth that make me laugh when you smile and yelp when you bite
Three solid food meals a day (at least)
(all) Fours that are rendering you mobile, a few movements forward and a few back
Five new places we visited on our holiday weekend- a playa, a dirt road, a mountain pass, a camp ground, and a hot spring.
Six o'clock is about the time you wake up and may or may not go back to sleep in the morning
Seven rolls to get you across the room (to my surprise)
Eight o'clock is about when you fall asleep at night
Nine months the same amount of time out as you were in. What an amazing month this has been.

zesty pasta

parsley*lemon*garlic

So trolling around Blogville last week I came across this recipe for pasta, lemon and parsley, yum. It sounded pretty good and I figured I would log it in the back of my mind for aa dinner later this summer. Little did I know that when I got home that night we would be wondering what the heck to make for dinner. And this recipe just happened to fit with almost everthing that we had lying around the pantry. So adapted and I went for it.

It was ever so good and I think going to be a regular this summer. It could be served hot from the stove, cooled as a side dish or as Ree (Pioneer Woman) suggest in her version, baked off what reminds me of my turkey tetrazzini.

Lemon Pasta- adapted from Pioneer Woman's recipe

3 tbls butter
2 tlbs olive oil
1-2 lemons (zest and juice)
2 garlic cloves minced
1/4-1/2 cup choppped basil
1/2-1 cup bacon bits or crumbled bacon (crumbled mild suasage would also be good here I think)
1/4 fresh or dried parsley
box of spaghetti or other pasta

Cook pasta
in a saute pan melt butter and heat oil.
add garlic and saute
add in zest of one lemon and juice of that same lemon

great cheese
great additional lemon's zest and juice
chop parsely and basil

Toss all ingredients to gether in a large bowl ans serve with extra lemon juice/zest and parm on the side.

Ginger cookie recipe

Not a very creative title, but there you have it ;)

So I got a couple of requests for the recipes for some of the food pictures I posted last week for Corner View. If you are interested here they are.

For the Ginger cookies:
(From a Martha Stewart recipe. Oh Martha, you do know a good thing don't you?)

Ingredients
Makes 12
2 1/2 cups all-purpose flour
2 1/4 teaspoons baking soda
1/2 teaspoon salt
1 tablespoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground pepper
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1/2 cup packed light-brown sugar
1/2 cup granulated sugar, plus 1/3 cup for coating
6 tablespoons molasses
1 large egg
Directions
1.Preheat oven to 350 degrees, with racks in upper and lower thirds. Line two baking sheets with parchment paper; set aside. In a medium bowl, whisk together flour, baking soda, salt, ginger, allspice, and pepper.
2.With an electric mixer, cream butter, brown sugar, and 1/2 cup granulated sugar until light and fluffy. Beat in molasses and egg. With mixer on low, gradually beat in flour mixture until just combined. Flatten into a disk, wrap in plastic, and freeze for 20 minutes.
3.Divide dough into twelve 2-inch balls. Place remaining 1/3 cup granulated sugar in a bowl. Roll balls in sugar to coat; place at least 4 inches apart on prepared baking sheets. Flatten into 3-inch rounds. Sprinkle with sugar remaining in bowl.
4.Bake until brown, rotating sheets halfway through, 12 to 15 minutes. Cool cookies on a wire rack.

I don't have a recipe for margaritas (if I am going to have one I usually go out to my favorite Mexican restaurant and pair it with a good chile relleno and whole pinto beans!), but I did have some killer homemade ones a few weeks back when my sister and her family came to visit. (I totally didn't blog about this, oops- here are a few photos from that weekend!). My Bro-in-law made Prickly Pear margos-um yeah.

It's the last day of school for the public school kids. We have to graduates on the cul-de-sac and have been invited to help celebrate the end of their journey and the beginning of an amazing new one. It is summer time y'all. Even if it isn't really summer time for another 17 or so days.

This week's "Corner View" we were asked to go with the theme of Beach. Hmm, I live in a high desert. This one is tricky. The closest beaches would be Tahoe, Donner Lake or Pyramid Lake and since I haven't had the chance to visit any of the magnificent little local gems as of late I leave you with a few dreamy little photo I took on the Santa Cruz board walk beach just a 6 hour drive west.

The Kiss

It was a perfectly paced weekend with thunder that shook the house and sheets of rain which almost had my windshield wipers beat.
There was visiting with girlfriends over a pizza and beer
There was yoga teaching (oh those baby bellies get me every time).
There was a sweet little birthday party.
There was two hour+ naps by the boy.
There was meeting up with an old/new friend and her two sweet boys. (So glad the Internet has reconnected us after almost 10 years!)
There was thunder and lightening (did I mention that already because it was kinda nuts)
There was sewing for a new little baby boy
There was splashing in a blowup pool out back under the new shades that Daddy-O worked so hard to put up this weekend.
There was laundry, dishes and vacuuming but no bisseling
There was 7.5 hours straight of sleep last night.

it was just right.
